A pesto made with the Red Eggplant of Rotonda DOP, which contains all the sunshine of Lucania. An eggplant that pretends to be a tomato at first sight, that recalls prickly pears at first smell and reveals itself to be gently spicy at first taste, reworked by Morgan in this elegantly rustic pesto, finely beaten, enriched with extra virgin olive oil, fresh garlic and orange zest.

How to use

Red eggplant pesto pairs well with goat cheese, white meat, grilled or steamed fish and gourmet sandwiches. It is perfect for seasoning cooked legumes as desired or simply to enrich a bruschetta.
