Ingredients per 20 persons

  • lean ground beef 1000gr
  • 20 mini round sandwiches
  • Anna's sauce
  • Anna's gardener
  • Gherkins
  • Tomato sauce
  • Breadcrumbs
  • Salt
  • Pepper

Procedimento

  • First of all proceed with the preparation of the meat mixture. Combine in a large container: the minced meat, 80 g of tomato sauce, 40 g of breadcrumbs, 16 g of salt and, if desired, 2 g of pepper. Mix with your hands until you obtain a homogeneous mixture. Then proceed to make balls of the mixture weighing 50 g each, flattening them slightly.
  • Heat a non-stick pan and once hot, sear the mini hamburgers for 2 minutes per side.
  • Then stack the hamburgers with a toothpick (4/5 at a time) so that they can easily be cooked on the sides as well. Take care to sear evenly on all sides. In this way, all the external parts of the hamburger will be sealed, caramelising the entire surface, while keeping the internal part pink and juicy.
  • Position the mini buns, previously toasted, cut in half on a plate ready to be stuffed. Proceed to place a generous dollop of Anna's Sauce on the bottom of each mini bun placing the mini burgers on top. Add a few grains of fleur de sel and, before closing the mini sandwich, place a little more Anna's Sauce on top of the burger. Then thread each mini burger with a toothpick.
